After a post-NYC week of doing quick meals, I needed to do some cooking.
Needed indeed. Cooking is therapy and happiness for me!
So on Friday evening I threw together my famous skillet lasagna, using home-canned tomatoes. The dish was topped with fresh ricotta and some basil from my garden.
While the lasagna was cooking, I washed and prepped some butter lettuce, cut up a small yellow pepper, diced some cucumber, and mixed all of this with my homemade creamy Parmesan dressing.
So dinner was salad and pasta, much of it prepped from scratch at home.
I do enjoy cooking!
